Peking
Roasted Duck is a famous Chinese dish with a world reputation. It was developed by the Chinese Ming dynasty;
it’s a traditional food for the Han nationality. At
that time Peking Roasted Duck was a food for the palace.
The real
Peking Roasted Duck used the rare breed of Peking duck. It is one of the most highest quality duck meats in the world today. It is said thousands of years before, Chinese emperor went on the
hunting trip and they found this pure white duck variety. Then they kept this
kind of duck like livestock. They bred improvements to it. Finally it became this
good variety of Peking duck.
In the
Ming dynasty, people loved to eat the dried salted duck,also the emperor loved it. It is said the famous emperor YuanZhang
Zhu ate dried salted ducks everyday. The chefs in the palace were trying to
develop new ways to please the emperor, and then they invented Roasted duck.
Also, because of they used the specific Peking duck, so it was called Peking Roasted Duck.
Peking Roasted Duck has many
different ways to be eaten. These are
two of the most famous ways.
The
first one was invented by the rich wives and the ladies. They don't eat green onions,
and garlic, but they like eating crispy duck skin with white sugar. Since then,
if there were lady guests the
restaurants must serve a little plate of white sugar with the Peking Roasted Duck.
The second way is people eat the duck with sweet
bean sauce and green onions, cucumber, and carrot sticks. They use chopsticks
to pick a little bit sweet bean sauce, and wipe it on the lotus leaf cake, then
put a few slices of duck cover on it, then put on green onions, cucumber or
carrot sticks. Finally they furl the pancakes. It is really delicious.
Peking Roasted
Duck must be eaten in the right season, the wrong season will affects its taste. The best
taste of it is in winter, spring and autumn. In summer, the weather is hot.
Ducks are not meaty and it’s in a bad quality of meat, so summer is not a good
season for Peking Roasted Duck.
